Objectives: learn the visual, olfactory and gustatory tests, and detect and recognize wine aromas and flavors
Program:
- How to taste wine
- Visual impressions: wine color
- Words for color and clarity.
- Tears or legs.
- Aroma families and their origins.
- Aroma recognition exercise
- Elementary flavors and mouthfeel.
- Commented tasting of 5 wines and discussion with participants
Talking about wine, understanding how it is made
Objectives: discover the composition of wine, master its vocabulary and understand how wine is made and aged
Program:
- The components of wine and their role in tasting
- Balancing the flavors of whites, rosés and reds
- Aromatic persistence: length in the mouth
- Flavor vocabulary
- Wine-making: different vinification and ageing techniques
- Rosé and sweet wine vinification and the Champagne method
- Commented tasting of 5 wines and discussion with participants
