Distillerie du Renard's philosophy of producing "natural" spirits is in symbiosis with the Manifeste des Gnôles Naturelles. As a result, Simon Tardieu became a signatory as soon as he set up the distillery.
This movement defends the production of high environmental quality eaux-de-vie in the face of so-called artisanal distilleries under European regulations which have become too flexible with regard to inputs.
A non-exhaustive list of these commitments in the Manifeste des Gnôles Naturelles:
- Distillation in a hand-operated copper still;
- ingredients are carefully selected and sourced from local organic farming;
- no added sugar, sweeteners, chemicals, additives?
no industrial alcohol is used.
The choice of its location in the heart of the Terrasses du Larzac vineyards is an extension of these commitments. The majority of its alcoholic bases are made from local terroir wines and are exclusively organic.
